Healthy Habits: Lightened-Up Pumpkin Spice Latte



Fall is finally here and if you haven’t noticed pumpkin spice is everywhere! We all know that our daily trips to the coffee shop for this delicious fall treat not only wreaks havoc on our wallets but on our waistlines as well. Our goal was to find a high-quality lighter version of the original that we can enjoy at home guilt-free!

v  1 1/2 cups fat free milk (or milk of choice)

v  2 tbsp pumpkin butter

v  2 tsp vanilla extract

v  1/2 tsp pumpkin pie spice

v  2 tsp sugar or sugar substitute (to taste)

v  1/4 cup of espresso (or 1/2 cup strong brewed coffee works)

v  fat free whipped topping (optional)

v  pumpkin pie spice for topping

In a small pan combine milk, pumpkin butter and sugar and cook on medium heat, stirring, until boiling. Remove from heat, stir in vanilla. Using an immersion blender, blend until smooth (or whisk well with a wire whisk).

Pour into two mugs, add the hot espresso and top with fat free whipped cream and a dash of pumpkin pie spice on top.
